Rambutan & Lime Cocktail
The inside of the rambutan contains a delicious, soft flesh in contrast to what the hairy and spiny outside may suggest. The sweet flavour of it makes it a lovely ingredient for this refreshing summer cocktail.
Ingredients - 2 glasses:
- 2 teaspoons sugar
- 2 fresh limes
- 5 fresh rambutans
- 60ml vodka
- ½ cup crushed ice
Preparation:
Cut the limes in halves and squeeze out the juice into a bowl. Peel and remove the seed for the rambutans. Cut the flesh of the rambutans in pieces and add these to the lime juice. Crush the rambutan flesh with a fork. Pour the mixture into a cocktail shaker along with the sugar, vodka and ice. Shake and pour into two cocktail glasses and serve immediately.
