Corn season 2011

Corn originates from southern Mexico & Central America and has been cultivated since 5,000 BC. Initially the plant was used as animal forage (field corn). Sweet corn was discovered in the middle of the 19th century. Sweet corn is probably the result of a naturally-occurring mutation in the genes of field corn.

Nowadays different corn varieties are year-round available. We offer sweet corn, baby corn and even purple sweet corn.

 

Sweet corn

Sweet corn is  the corn kernel of the sweet corn plant. The ear is a collection of kernels on the cob and is covered by tightly wrapped leaves called the husk. We offer both fresh & sous-vide sweet corn.

  • Fresh sweet corn has a shelf-life of 14 days.
  • Due to the fact that sous-vide sweet corn is preheated at 70˚C and after that sealed in plastic, it has a shelf life of 6 months.

Sweet corn is delicious when cooked and eaten directly from the kernel with some butter and salt. Our sweet corn originates from France, Israel, Morocco & Spain.  

 

Purple sweet corn

Purple sweet corn is a sweet corn variety which is mainly used for decoration. However, in Peru it is also used as a populair Chicha morada drink. 

   

Baby corn

Baby corn is a popular Asian vegetable and is the immature ear of fully grown standard cultivars of either sweet corn or field corn. There is no taste advantage in growing a sweet corn variety over field corn, since the ears are harvested before the sugars have an opportunity to accumulate. The ideal ear size is 9 to 10cm long and approx 1,5cm in diameter. Baby corn can be eaten whole and is therefore perfect for stir-fry dishes. Our baby corn originates from India & Thailand.
