In the mood for a special, but easy to make dessert? Prepare a creme brulee with fingerlimes! The preperation is simple and the result is mouth watering.

Ingredients - 8 persons:

  • 10 egg yolks
  • 200g sugar
  • 200ml full cream milk
  • 450ml pure cream
  • 75g fingerlimes
  • 1 vanilla bean
  • 50g cassonade (extra fine brown sugar)

 

Method:Mix milk and cream in a heavy based saucepan and boil with vanilla bean cut in half and scraped. Add fingerlime pulp. In a mixing bowl blench egg yolks and sugar; pour boiling milk on top while whisking. Skim any froth from the top of the mix. Pour into moulds and bake at 100ºc  for approx 80min. Sprinkle the top with cassonade and caramelise with a blow torch.
