Lettuce stew with mango and smoked chicken

A typical Dutch dish with a exotic touch.

Main course for 4 people:

  • 1 ¼ kg floury potatoes
  • salt
  • 1 head iceberg lettuce
  • 1 Nature's Pride Ready-to-Eat mango
  • 225 g smoked chicken breast
  • 4 tbsp mustard
  • freshly ground pepper

Preparation:

Peel the potatoes, cut into pieces and boil them in salted water for ± 20 minutes until tender. In the meantime, cut the mango. It is highly recommended to cut a mango with a mango slicer to remove the seed. If you don’t have a mango slicer, hold the mango lengthwise and cut the fruit on both sides, as closely as possible of the seed. From here, peel the halves, cut 1 / 8 share in slice, for garnish. Cut the rest of the fruit into cubes. Halve the lettuce, cut the core out and the rest into thin strips. Wash the lettuce and let it drain well. Cut the chicken into thin slices. Keep 5 beautiful little slices for garnish.
Drain the potatoes, but flank ½ cup of the cooking water.
Create a creamy stew by mashing the potatoes and adding the cooking water that was left behind. Add the lettuce and heat the stew while stirring it.   Spoon the mango pieces, the chicken mustard and some salt and pepper into the mixture. When heated, remove from the stove and garnish with mango and chicken.

Variation tip:
Replace the smoked chicken for salami or chorizo.
