Mango Salad with marinated prawns

Enjoy salads not only during summer, but during the whole year.
Ingredients for 4 salads:
- 20 large raw prawns
- 1 clove garlic
- 2 cm fresh ginger
- 1 lime
- Stir 2 tablespoons oil
- freshly ground pepper
- ½ iceberg lettuce
- 1 Nature's Pride Ready-to-Eat mango
- ½ -1 red pepper
- 2 spring onions
- 4 tbsp unsalted peanuts
- salt
- 2 tbsp coarsely chopped cilantro leaves
Preparation:
Peel the prawns, but leaving the tails. Peel and press the garlic with a garlic press into a bowl. Peel the ginger and grate it into the same bowl. Add some pepper,1 tbs. lime juice and 1tbs. oil and mix thoroughly. Now marinate the prawns with the mixture for ± 15 minutes. Wash, cut and dry the lettuce. Cut the mango in half around the pit, cut out the seed and cut the flesh into thin slices. Wash and cut the red pepper and spring onions into thin slices. Coarsely chop the peanuts. For the dressing, mix the remaining lime juice, oil together and add some salt and pepper. Fry the prawns, in a hot pan, until pink. Mix all the ingredients together and garnish with coriander.
Preparation time: 20 minutes ± and ± 15 minutes to marinate
Variation tip:
Replace a the red pepper for a bell pepper.
