Finger lime, also called the caviar of citrus does not look like other limes. Finger limes are native to Australia. This lime has a shape and size of an adult finger. The skin can be green, orange, yellow or red, depending on the type and has a distinctive bush aroma. The fruit contains juicy pearls which are similar to caviar in size and texture. The colour of these pearls ranges from white to pink, lime green and yellow. When you bite into the finger lime pearls, they burst in your mouth, releasing their tangy lime flavour.

Preparation
Fingerlimes are particularly loved as a garnish on seafood, because of the unique lime pearls that have the appearance of caviar and burst refreshingly in your mouth. They are also popular for making jams, sauces and salad dressings. They are a great substitute for the ordinary lemon.
ConsumptionCut the fruit into two halves. Scoop out the lime pearls with a tablespoon. The skin is not eaten.
