    With an impeccable eye for flavor and quality our "Olio Verde" is harvested from carefully selected olives green for optimum taste. The olives are still green when they are hand picked during a two week window, at a time when the olives develop a natural white film on them, when they are just about to ripen, and long before any kind of fermentation will take place. Early harvest and immediate pressing makes this the lightest, purest, most beautifully flavored oil.

Did you know?

  • We don’t use raking tools or shaking to remove the olives from the trees, which would damage the fruit and cause it to ferment.
  • All of our olives are hand picked.
  • Our Olio Verde is not filtered, but the oil simply settled before bottling.
