Sage is an herb with oblong gray-green leaves. Sage is native to southwestern United States and northwestern Mexico. The herb has a pungent, slightly bitter to peppery flavour. The herb is available in both fresh and dried form. Sage is one of the few herbs which actually has a more intense and concentrated flavour after drying.

Preparation
Dried sage does not need any preparation. Fresh sage should be washed before adding it fresh or cooked to a dish.

When to eatFresh sage can be kept for a short time in the refrigerator, or for a longer period in the freezer. Dried sage can be kept at room temperature.
