    Sopropo is related to the cucumber and is also a immature fruit. Sopropo is native to tropical Asia, but comes in a variety of shapes and sizes. The typical sopropo is green, 20 to 30 cm long and oval shaped. Sopropo has an undulating surface. Its flesh surrounds a central seed cavity filled with large flat seeds .The seeds are white.The flesh is crunchy and watery in texture and has a bitter taste.

Cut the fruit into 2 halves and discard the seeds and fibrous core. To reduce the bitterness, blanch in boiling water for 2 to 3 minutes. The skin is edible and the melon is not typically peeled. The seeds are also edible, unless they are very hard. Cut the sopropo is pieces and add to a dish cooked or raw.

Consumption

Sopropo is often used in Chinese cooking for its bitter flavour, typically in stir-fries, soups, and teas. It is also a popular ingredient for salads or to stuff. The skin is tender and edible.

When to eat

Choose a sopropo which is still green for a more bitter flavour and a yellow-orange fruit for a milder taste. Keep the Sopropo refrigerated and consume within a few days.
