The pansy is a real runner in garden centre assortments in springtime. Its appeal is understandable, because the pansy looks very beautiful with its three different colours. A less known fact it that the flowers are edible. The edible tricolour pansy has a mild flavour that is similar to lettuce. As a result, the edible pansy is also a flower that easily combines with many dishes, including desserts.

The flower is particularly popular as a garnish, thanks to its decorative appearance. The colours vary from purple and dark blue (the top two petals) to light lilac, blue and yellow for the two outer leaves and yellow-white at the bottom.
