Soy plants also provide legumes: edamame beans. The young soybeans can be recognised by their skin: firm and stringy, with small white hairs. The skin is not edible, but the 3 green beans inside are. They are notable for their pleasantly nutty flavour. It is no coincidence that edamame is a popular addition to many oriental recipes.

Recipes & preparation tips

Start by toroughly rinsing the whole soybeans and then cook them for 8 to 10 minutes. Avoid overcooking them, to retain their firm bite. Then squeeze or peel the pods open to eat the beans as a snack, just like the Japanese do. Edamame is also a tasty bean to use in preparations. Use them to add a slightly different accent to a salad, or as a surprising addition to a poké bowl. Tip: you can also make delicious hummus with edamame beans.
