Amsoy has a striking other name: Surinam endive. Indicentally, this leafy vegetable is Chinese in origin. Its appearance is reminiscent of turnip greens, although it is larger in size.

The taste is somewhere between savoury and mustard-like. The leaves are full of vitamin E and calcium. In terms of preparation, amsoy is very similar to spinach. During cooking, the leaves wilt considerably.

Recipes & preparation tips

Amsoy is a very convenient to use. It does not require much preparation: just rinse the leaves thoroughly. If they are added raw to a dish, pat the leaves dry. Amsoy is also delicious steamed or stir-fried. Make sure you buy enough amsoy, because just like spinach, it wilts considerably.
