A well-known ingredient in Mediterranean recipes

The aroma of rosemary is very distinctive and recognisable. This herb thanks its aroma to the essential oils it contains, which is appreciated in the kitchen as well as elsewhere. Many health benefits are attributed to fresh rosemary. The taste is intense and reminiscent of Mediterranean cuisines, but use it sparingly: it will easily overpower your recipe.

The twigs grow on a hardy shrub, with needle-like leaves in two colours: dark green on top, white on the bottom. They sort of look like pine, a tree that has a scent similar to that of rosemary.

Storage advice

  • Transport and storage: Refrigerated storage and transport is required for rosemary. In practice, this is a temperature between 2 and 4˚C.
  • Shop: Present rosemary with the other herbs in the refrigerated section.

Recipes & preparation tips

Rosemary is often mentioned on the ingredient list of meat recipes. The EAT ME website also suggests several other adventurous uses, such as a focaccia with physalis. It is important to add the fresh herb early on, to allow the flavours to fully develop. Chop the needles as finely as possible. Just rinse and remove the leaves from the sprigs.
