Growing and harvesting

Young asparagus plants are cultivated in fields and covered with sand, so they don't get any sunlight. This is how the asparagus stay white and have a distinctive flavour. It takes three years for young asparagus plants to grow to large asparagus plants. Than they can be harvested for the first time. The white asparagus need to be harvested at just the right time, because as soon as the head appears above the ground the spear can change colour. After the asparagus are harvested, they go to a pack house where they are washed, cooled and graded by size and quality.
