The impressive journey of green asparagus

Green asparagus are the young shoots of the asparagus plant. They have straight upright fleshy spears and are light green. Asparagus is a member of the lily family, which also includes onion, leek and garlic. Of all asparagus varieties, green asparagus has the fullest, slightly bitter, flavour. Another advantage green asparagus has over other asparagus is the fact that it doesn't need to be peeled. In addition, thanks to its full flavour it is extremely versatile.

It takes three years before a young asparagus plant becomes a mature plant. Only then the asparagus can be harvested for the first time. After the first harvest it takes about 1 to 2 days before a new green asparagus spear has matured. In contrast to white asparagus, green asparagus grows above the ground. Its colour comes from photosynthesis. Photosynthesis is a process in which sunlight causes chlorophyll to be manufactured in plant cells, and colours it green. When the spears reach a certain length they are harvested. In the summer the asparagus grow very fast, to maintain a good quality they are sometimes cut twice a day. An asparagus field is cultivated twice a year for a period of 20 days. After this, it's time the leave the plants to rest for 5-6 months, so the beds are ready for the next harvesting period.

After the green asparagus have been harvested they are washed, cooled and graded by size and quality in a packhouse. The suppliers make sure that the green asparagus are transported to Nature's Pride within a maximum time of 1 day after harvesting. After a journey of about 1 to 2 days the product arrives and is offered for sale to consumers. Thanks to this quick process the end consumer can enjoy a delicious fresh product.
