Growing and harvesting

It takes three years before a young asparagus plant becomes a mature plant. Only then it's possible to harvest for the first time. After the first harvest it takes about 1 to 2 days before a new asparagus spear has matured. In contrast to the white asparagus the green asparagus grow above the ground. When the spears reach a certain length they are harvested. In the summer the asparagus grow very fast, to maintain good quality they are sometimes cut off twice a day. An asparagus field is cultivated twice a year for a period of 20 days. After this, it's time the leave the plants to rest for 5-6 months, so the beds are ready for the next harvesting period.
