Lavender is a flower that owes its popularity mainly to its all but irresistible scent. It is reminiscent of the Provence, where the flower is mainly grown for use in the cosmetics industry. Lavender is also a flower that offers many possibilities for culinary adventurers. Although all lavender varieties are edible, not every variety is equally tasty. Some are sweet, others taste bitter.

The young leaves of the lavender shrub particularly come into their own in salads. The flowers have a sweeter character and are more suitable for desserts. Lavender has a strong aroma, so careful dosing is a must.

  • Transport and storage: The flowers best retain their quality under refrigerated conditions. Maintain a temperature between 2 and 4˚C during transport and storage.
  • Shop: The shelf life of edible lavender remains optimal on the refrigerated shelf.

Recipes & preparation tips

Edible lavender is mostly used in desserts. The flowers work well in a variety of desserts, such as a chocolate cake or a dessert sauce. The purple-blue colour of the edible flower also adds an interesting dimension to ice cream desserts. Because the delicate flowers easily lose their shape in the water, rinsing before use is not advisable.
