Salsify are long thin roots with a brown bark-like skin. The inside of the root is creamy white and has a slightly fibrous structure. The flavour resembles a combination of artichoke and asparagus.

Salsify is kept refrigerated in storage and during transport. The ideal temperature during transport is 8 degrees Celsius. At home the salsify needs to be kept in the fridge.
