There is no difference in appearance: the fruiting vegetable is recognizable as a vase, with a long neck and a round base. Its skin is beige or yellow and is easy to remove. The pulp is orange and fleshy, with a nutty flavour. The taste becomes fuller and sweeter as the squash ripens.

Peeling and chopping into pieces is all the preparation this produce requires. Butternut squash is the perfect companion in a curry. Pumpkin soup is also very popular. Butternut squash works well combined with sweet potato and puff pastry, as an alternative to traditional lasagna. The fruiting vegetable can be chopped into pieces, peeled or unpeeled. Toasted seeds are a surprising snack.
